Without drying the cinnamon, we proceed with the production. Our process involves immersing the sticks in water at a 50% level at first, and then reducing the water level to 18%. We check the water level weekly and then proceed to bundle or cut and pack the production. This is the best way to produce organic Ceylon cinnamon sticks."

"Ceylon cinnamon sticks are assembled one by one before joint assembling. Prior to assembling the joints, we keep them outside in the sun to reduce the moisture to 45%. After this, we begin the assembling process, cutting all the sticks to a standard length of 21 inches for easy handling and work. Ceylon cinnamon tree bundles are being transported by workers from the mountain farm area to the main road, where they are loaded onto vehicles.

Ceylon cinnamon farm workers start their day early, usually between 4:30 am and 6:00 am, to begin cutting cinnamon trees with sharp tools. This work is difficult and demanding, as they have to face the challenges of arriving early in the morning and working in teams, all while dealing with the unpredictable weather, particularly heavy rain. The workers face dangers such as the risk of injuries when lifting and transporting the cinnamon bundles to the main road, especially during rainy conditions. Despite these challenges, they work hard from start to finish. the workers usually work for one week and then take at least two days of rest due to the hard work and the effect of heavy rain. In the working time, they have to finish the work fast, otherwise, they cannot wake up early the next day to go to the farm. Workers take only 10 to 15 minutes for breakfast and lunch. This is the life of a cinnamon worker. However, at the end of the sale, they will enjoy time with their family. This happiness can be seen in the faces of those buying cinnamon. Each day, a team cuts over 500 trees. After cutting, one person is responsible for the cinnamon, while the others take care of different tasks such as calculating and bundling. This all contributes to successful cinnamon production.
